Step 1: Carefully trim the crusts of the bread. Line several slices at a time and cut them into strips. Cut the strips into cubes. Put 1 and a half cups of cubes into a large bowl and set the rest of the cubes aside.
Step 2: Add the scallions, red bell pepper, parsley, dill and crabmeat into the bowl. Break up any lump of crab using your hands and then carefully toss the mixture until the ingredients are evenly combined.
Step 3: Light beat the egg in a small mixing bowl. Add the mayonnaise, mustard, seafood seasoning, Worcestershire sauce, and salt. Beat the mixture well to blend. Carefully pour the sauce over the crab mixture and then stir until the new mixture clump together.
Step 4: Using the plastic wrap line the baking sheet. Shape the mixture into medium size balls. Roll each ball in the fresh bread cubes to coat. Place them on the baking sheet. Flatten the balls slightly to form burger patties. It should be 1 inch thick. Once done, cover with plastic wrap and chill for 2 hours before frying.
Step 5: Preheat oven to 300 degree F. Spread the dry bread crumbs to plate. Melt the butter in a skillet over medium heat. Dredge half of the patties in the dry bread crumbs and then fry to melt butter about 3 minutes. Transfer the fried crab cakes to a baking pan and keep the patty warm in the oven while frying the second batch. But before frying, melt half the butter on the pan. Then do same procedure on the second batch.
Step 6: Serve the crab patties plane or toasted roll with a slice of tomato, lettuce and seafood sauce for a great recipe ideas.
