Step 1: Spray Crock Pot with a non-stick cooking spray, or use a slow cooker liner.
Step 2: Cut meat into thin strips, and place in the Crock Pot.
Step 3: Add green pepper, onion, mushrooms, stock, garlic salt, pepper and dressing mix.
Step 4: Cover, and cook on low 7-8 hours, or on High for 3-4 hours.
Step 5: Spoon meat mixture onto lightly toasted rolls.
Step 6: Top with cheese, then put the rolls on a baking sheet, and bake at 350 degrees, an additional 2-3 minutes, to melt the cheese.
