Step 1: Preheat oven to 375 degrees F. Spray a 9 inch baking pan with cooking spray. In a bowl of an electric mixer combine the flour, butter, vanilla, 1 cup sugar and 1/4 teaspoon salt beating until it resembles coarse crumbs (this could also be done in a food processor). Reserve 1 cup of the mixture. With the remainder press into the bottom of the prepared pan.
Step 2: Bake for 15-20 minutes and then transfer pan to a wire pack and let cool completely for 30 minutes before proceeding. No need to turn off the oven.
Step 3: In a bowl combine the next 3 ingredients (pineapple - lemon juice) along with 1/3 cup sugar and 1/4 teaspoon salt, stirring until combined. Spread mixture over the crumb crust in the cooled pan.
Step 4: In a bowl with the reserved crumb mixture add the almonds, stirring to combine. Sprinkle over the pineapple mixture in the pan. Bake at 375 degrees F for 45-60 minutes or until done. Transfer to a reck and let cool for 1 hour before serving.
