Step 1: In a bowl add the cherry tomatoes with the red onion, olive oil and vinegar; toss and then add the salt and let stand for 20 minutes, stirring every 5 minutes or so.
Step 2: Arrange the heirloom tomatoes on a platter and then add the cherry tomatoes and dressing on top. Season with pepper and sprinkle the mint and sea salt over all.
