Step 1: For the dressing: In a small bowl combine the shallot, lime and lemon juice, and 1/2 teaspoon each salt and pepper. Whisk in the olive oil.
Step 2: In a medium saucepan bring salted water to a boil. Add the couscous; cook 6 to 8 minutes or until tender. Drain and rinse with cold water. Drain again.
Step 3: Arrange couscous, shrimp, cantaloupe, cucumber, spinach, and basil on a platter. Drizzle with the dressing. Toss before serving.
