Step 1: Melt butter and stir in vanilla wafer crumbs
Step 2: Spoon into ramekins and lightly tamp down to form a crust. If you pack it down hard it will cook up like concrete.
Step 3: Remove seeds from papaya. Scoop the flesh into a blender and blend until smooth.
Step 4: In large bowl microwave cream cheese for 1 to 2 minutes just to soften it
Step 5: With mixer at low speed, beat cream cheese, sugar, eggs, vanilla, and 1/2 cup papaya puree until smooth and well blended
Step 6: Microwave on high 4 to 6 minutes, until very hot, beating 3 times during cooking.
Step 7: Remove from microwave and beat one last time until smooth. [ lick beaters and put in sink ]
Step 8: Spoon mixture into ramekins. Arrange in an evenly spaced circle in microwave and cook 3 to 4 minutes, until almost set, rearranging them twice.
Step 9: Remove from microwave and let them stand for 15 minutes.
Step 10: Put remaining papaya puree in a small bowl and stir in icing sugar to taste and then cover it.
Step 11: Refrigerate cheesecakes and puree until well chilled - several hours.
Step 12: To serve, take cheesecakes out of fridge about an hour ahead, and just before serving top with the remaining papaya puree.
