Step 1: Preheat the oven to 450 degrees F. Stir together the first 3 ingredients and let them stand for 5 minutes.
Step 2: Meanwhile, saute the onion in hot oil in a medium-size skillet over medium heat for 5 minutes or just until tender.
Step 3: Stir together the bread mixture, onions, ground beef, next 5 ingredients and 2 tablespoons hot pepper relish just until blended.
Step 4: Shape into 8 loaves (about 1/2 cup each); place in cups of a lightly greased 8 cup mini loaf pan. (I don't have one and just shape them and place them on a wire rack in a baking pan or jelly roll pan.). Each cup will be about 3 1/2 x 2 1/2 inches.
Step 5: Bake at 450 degrees for 25 to 30 minutes or until a meat thermometer registers 155 degrees, brushing with 1/3 cup hot pepper relish during the last 10 minutes of baking. Remove from the oven and let stand for 5 minutes. Serve with the remaining relish.
