Step 1: Preheat oven to 375°.
Step 2: In a medium bowl, cream together the sugars and shortening using an electric mixer. Mix on slow speed 30 seconds, then scrape down the bowl with a spatula. Increase speed to medium and mix for 3 minutes.
Step 3: Slowly add vanilla and beaten egg while mixing.
Step 4: In a separate bowl, combine the flour, baking soda, baking powder and salt. Gradually add the flour mixture to the mixing bowl, mixing on slow speed until just blended. Do not overmix.
Step 5: Scoop with an ice-cream scoop and roll in sugar. (Or leave plain and frost after baking.) Place directly on cookie sheet. Flatten slightly with palm of hand.
Step 6: Bake at 375° for 9-10 minutes. Cookies are done when small cracks appear and are pale golden. Ideally, the edges do not brown.
Step 7: Optional Frosting: Beat together the butter, vanilla, 1/2 cup powdered sugar and 1 tablespoon of cream until well blended. Add alternating portions of 2 tablespoons of cream with another 1/2 cup of powdered sugar, beat well. Continue adding in portions the sugar and cream until you have incorporated all the sugar. Add additional cream as necessary.
