Step 1: Put vegetables in large pot and cover with 2-3 quarts of water..
Step 2: Bring to a boil, reduce heat and simmer 2 hours, stirring frequently.
Step 3: Add seasonings and simmer 1 hour longer.
Step 4: Strain.
Step 5: Add water to make 2 quarts.
