Step 1: Large saucepan
Step 2: Cook bacon until crisp
Step 3: Remove
Step 4: Drain pan , reserving 1 tablespoon drippings.
Step 5: Saute onion in drippings until tender. Add broth, potatoes, salt and pepper. Bring to a boil.
Step 6: Reduce heat; simmer, uncovered, for 12 minutes or until potatoes are tender.
Step 7: Combine flour and milk until smooth;
Step 8: Gradually stir in potato mixture.
Step 9: Bring to a boil
Step 10: Cook and stir for 2 minutes or until thickened and bubbly.
Step 11: Remove from the heat
Step 12: Stir in cheese and mustard until melted.
Step 13: Sprinkle with baconand parsley
