Step 1: Peel, core, and slice apples into a saucepan.
Step 2: Add water and the orange rind (or lemon juice).
Step 3: Simmer covered until tender--about 8 minutes.
Step 4: Add cinnamon, nutmeg, and allspice and mash with a fork or potato masher.
Step 5: Serve warm or chilled.
