150 grams coconut (1 cup coconut flesh, 1 young coconut will get you 1 cup flesh)
2 mango (peeled and flesh scooped out)
1/4 cup spearmint leaves
2 teaspoons lime juice
1 tablespoon apple cider vinegar
1/2 teaspoon chilli flakes
1/2 teaspoon lime rind, finely grated
Sea salt flakes, to serve
How to Make
Step 1:
Place the coconut, mango, mint, lime juice and vinegar in a bowl and toss to combine and then top with the chilli, lime rind and salt to serve.
