Step 1: Combine cream and 1 cup of the sugar in a large saucepan and stir over a low heat until sugar is dissolved and then bring to boil. and gently boil for about 15 minutes, or until slightly thickened and then remove from heat and cool slightly. (this is the caramel sauce)
Step 2: Meanwhile, cut peaches in half and remove and discard stones.
Step 3: Place remaining sugar in a shallow bowl and dip cut-side of peaches into sugar.
Step 4: Heat a lightly oiled barbecue grill plate over a high heat and add peaches, cut-side down and cook for about 3 to 5 minutes, or until charred and tender.
Step 5: Remove and serve peaches with ice-cream and drizzle with warm sauce.
Step 6: TIP - peaches can be replaced with nectarines, for a change. Sauce can be made up to two days ahead. Keep refrigerated. Reheat in the microwave or in a saucepan.
