Step 1: Heat oil in a large skillet over medium-high heat.
Step 2: Add in the sausage meat and onion; cook stirring constantly until lightly browned (this may take about 12 minutes or a little more the meat must be lightly browned) drain some fat but leave a little in the skillet for the flour to hold on to).
Step 3: Stir in the flour and cayenne pepper until blended.
Step 4: Pour in the milk; bring to a simmer and cook stirring until bubbly and thickened.
Step 5: Season with salt and pepper.
