Step 1: Preheat the oven to 400-degrees Fahrenheit.
Step 2: Heat the oil in a medium saucepan over medium heat. Add the garlic and cook, stirring once or twice, until soft, 1 to 2 minutes. Stir in the salt paprika, and red pepper flakes and reduce the heat to medium-low. Cook stirring occasionally, until the mixture is blended, 2 to 3 minutes. Remove from the heat.
Step 3: Rinse and pat dry the mushrooms. Arrange them in a single layer on a baking sheet and brush them all over with the garlicky oil. Roast for 15 minutes. Turn the mushrooms over and continue baking until they are golden brown, about 10 minutes.
Step 4: During the last 10 minutes, return the saucepan to the stove over low heat. When the mushrooms are ready, turn them into the saucepan along with any juices that have accumulated on the baking sheet. Stir well to coat the mushrooms. Add 1 tablespoon of the parsley and stir again.
Step 5: Pour into a chafing dish to keep warm. Garnish with the remaining parsley and serve with toothpicks.
Step 6: Makes about 90 mushrooms and can serve 20-30 for a party and less if using as a side.
