Step 1: Heat oil in a fry pan over a medium heat, add the garlic and chili ~ cooking gently for around 2 minutes.
Step 2: Add the sherry and prawns, then turn up the heat and cool, stirring occasionally. for 3-4 minutes or until the juices have reduced by half ~ mind you do not over cook the prawns.
Step 3: Season with the salt and black pepper and serve.
