Step 1: Heat butter in stockpot
Step 2: Add onions. Cook until golden
Step 3: Add celery, seasonings
Step 4: Add flour, dont brown
Step 5: Add milk, whisking as you add. Simmer dont boil 5 minutes
Step 6: Stir in cheeses
Step 7: Take off heat. Stir in chives
