Step 1: Line a baking sheet with waxed paper, set aside. Stir together water, sugar and cinnamon in a heavy bottomed saucepan. Leave plenty of room to work, this is going to be your "mixing bowl". Over medium heat, bring ingredients to a full boil.
Step 2: Add almonds to boiling sugar mixture. Cook and stir constantly until water begins cooking off. Sugar mixture will thicken and coat the almonds.
Step 3: Keep stirring until mixture starts to crystallize and get a little dry. Pour onto prepared baking sheet. Using forks, mixture will be burning hot, separate almonds into single layer. Allow to cool. Store in airtight container.
