Step 1: Process first 5 ingredients in a blender or food processor until smooth, stopping to scrape down sides.
Step 2: Stir in half of bacon, then season mixture with black pepper to taste.
Step 3: Cover and chill 2 or more hours.
Step 4: Let stand at room temperature 15 minutes before serving.
Step 5: Sprinkle with remaining bacon.
Step 6: Serve with crackers.
