Step 1: In a bowl whisk together the marinade ingredients (oil-pepper).
Step 2: Thread 6 shrimp on each of six metal skewers (10-12 inch) and place the skewers in a glass baking dish. Spoon all but 1/4 cup marinade over the shrimp and turn to coat. Cover and refrigerate for 30 minutes or up to 2 hours.
Step 3: Prepare grill (medium high heat) and grill shrimp until opaque in center (about 5 minutes total, turning halfway through). Arrange on a platter and spoon the reserved marinade over the skewered shrimp.
