Step 1: Combine all batter ingredients in a large bowl and let sit for 2-3 hours
Step 2: Remove shrimp from shells and de-vein (leave the tail on)
Step 3: Make tiny crosswise slashes on the underside of the shrimp to prevent them from curling
Step 4: Combine shrimp, lemon juice, ginger and salt and pepper to taste. Let sit in fridge 30 min to marinade
Step 5: In a wok or a deep skillet heat 6 cups oil to 375F
Step 6: Pat shrimp dry with paper towel, and dip into batter
Step 7: Carefully add a few shrimp at a time to hot oil and cook 3-5 min, or until golden
Step 8: Drain on paper towel
Step 9: In a small bowl combine all curry mix ingredient
Step 10: To serve: allow guests to sprinkle curry mix on shrimp
