Step 1: Add potato, zucchini, carrot, celery, and scallions to slow cooker,.
Step 2: Add stock and season with salt and pepper.
Step 3: Cook on high 3-4 hours.
Step 4: Just before serving, add creamed corn, cheese and parsley.
Step 5: Serve when cheese has just melted.
