Step 1: Combine syrup ingredients in a medium saucepan.
Step 2: Cook over low heat, stirring occasionally, until sugar dissolves.
Step 3: Simmer for 5 minutes longer to infuse flavors.
Step 4: Let syrup cool, then strain and discard solids.
Step 5: Chill until ready to use.
Step 6: Peel papaya, cut in half, and scoop out seeds. Cut papaya into cubes and place in a large bowl with mango, banana, kiwi fruits, and ginger.
Step 7: Drizzle about 1 cup of the syrup and stir gently to coat.
Step 8: Serve chilled with a scoop of ice cream.
