Step 1: In a saucepan, sauté the crushed garlic in the oil over medium heat until just golden.
Step 2: Add the red curry paste and continue stirring for 2 minutes.
Step 3: Add the coconut milk, sugar, and lemon grass.
Step 4: Heat for 10 - 15 minutes.
Step 5: Add the lemon juice.
Step 6: Remove the lemon grass.
Step 7: Add the ground peanuts and continue cooking until the sauce begins to thicken.
Step 8: Season to taste with salt and pepper.
Step 9: Set aside and cool.
