Step 1: Tomatoes ... Add the tomatoes to a bowl along with the olive oil, Italian seasoning, salt, pepper and sugar; toss well. Add to a baking sheet lined with parchment paper or foil for easy clean up.
Step 2: Bake or Pan Sear ... I prefer to roast mine in a 400 degree oven, middle shelf for 15-20 minutes until the tomatoes begin to pop. However, these can also be done in a non stick pan on medium high heat for approximately the same amount of time. To me the oven just adds extra flavor you can't get on the stove top.
Step 3: Serve ... These are just good - served with just about anything. Grilled steak, baked fish, lamb chops, etc. A nice touch to the dish is to toss with fresh basil, optional, but it is a nice finish to the dish. ENJOY!
