Step 1: Process first 6 ingredients in a blender or food processor until smooth, stopping to scrape down sides. Stir in HALF of the bacon. Cover and chill 2 hours.
Step 2: Let stand at room temperature 15 minutes before serving.
Step 3: Sprinkle with remaining bacon.
Step 4: Garnish, if desired. Serve with crackers.
