Step 1: Bring milk to a boil
Step 2: Add 1/4 cup butter and gruyere cheese
Step 3: When melted add grits and seasonings
Step 4: Whisking as you add
Step 5: Cook until thickened
Step 6: Stirring constantly
Step 7: Take off heat beat hard 5 minutes (use mixer here)
Step 8: Pour into buttered pam sprayed casserole 3 quart
Step 9: Cool
Step 10: Pour melted butter over top and sprinkle on parmesan cheese
Step 11: Bake 30 minutes at 400 minutes
