Step 1: Combine first 6 ingredients
Step 2: Place the 2 tortilla on work surface, spread half of the cheese over each; top each with half of the roast beef slices, leaving a 1/2 inch border around edges
Step 3: Roll up tightly in plastic wrap and refrigerate until firm about 30 minutes or up to one day ahead.
Step 4: Cut diagonally into 1/2 inch slices and serve cold.
