Step 1: Mix the sugar, syrup and water in a saucepan over a low heat, stirring continuously until sugar is dissolved.
Step 2: When the mixture is very hot remove from heat and add food colouring and four 3/4 of the mixture onto a shallow tray lined with baking paper.
Step 3: Cool and smash into small, uneven pieces.
Step 4: Wet swizzle stick into the remaining warm sugar syrup then roll in the broken crystals.
Step 5: Lt is dry then wet again by drizzling on some syrup then roll again in the crystals and repeat until you have the desired result.
