Step 1: Preheat oven to 350°. In a medium bowl, beat the coconut oil and butter with an electric mixer until pale and creamy, about 3 minutes.
Step 2: Gradually beat in the sugar or honey until well blended. Add the maple syrup, egg and vanilla and mix until blended.
Step 3: Add the flour and the xanthan gum and mix well. Fold in the pecans.
Step 4: Drop by tablespoonfuls on ungreased cookie sheets. Spread them out, if you like, as they don't spread in baking. Bake for about 20-25 minutes, until golden.
