Step 1: Poach the Turkey with water and vegetables until cooked 3 hours cover on simmer
Step 2: Dont brown
Step 3: Cook just until tender
Step 4: Debone and chop
Step 5: Save broth ,it says allow the fat to rise to the top and discard, I'm not sure this is accurate as they used the fat for everything, use the rest of the Turkey for other recipes
Step 6: For the sauce
Step 7: Melt butter and add flour
Step 8: Brown a little add stock and simmer until thickened
Step 9: Add Turkey and warm up
Step 10: Season
Step 11: You can cut this recipe in half if needed
