Step 1: Steam cauliflower in a steamer basket over boiling water until tender, about 3-4 minutes. Mash with a fork.
Step 2: Meanwhile, heat a nonstick skillet with 1 teaspoon virgin olive oil over medium-high heat. Add onions and sauté until tender.
Step 3: Add onions to mashed cauliflower and top with cheese.
