Step 1: Heat a frying pan over a medium-high heat and add spices except turmeric and nutmeg and stir, frequently, for 2 to 3 minutes or until spices are toasted and fragrant.
Step 2: Transfer to a bowl and cool completely.
Step 3: Process in a small food processor until a fine powder forms and stir in turmeric and nutmeg.
