Step 1: Combine buttermilk, paprika, lime zest and lime juice in a bowl and season and then add chicken and cover and place in the fridge for 30 minutes or overnight to develop the flavours.
Step 2: Heat a barbecue grill or chargrill pan on high.
Step 3: Drain the buttermilk mixture and pat chicken dry with paper towel and cook on grill for 5 minutes each side or until charred and cooked through and transfer to a plate.
Step 4: Cook the buns on the grill, cut-side down, until charred.
Step 5: Spread bun bases with a little mayonnaise and top with the lettuce, chicken, cheese. pineapple, onion, barbecue sauce and remaining mayonnaise and bun tops.
