Step 1: Preheat oven to 220C (fan forced).
Step 2: Line a baking tray with baking paper and place pita pocket on tray and spread hummus evenly over the pocket and then top hummus with half the spinach leaves, then add eggplant and capsicum strips and top with the prawns and bake for 8 minutes, or until prawns are cooked and the base is slightly crispy.
Step 3: To serve, spoon sour cream over the top and drizzle over sweet chilli sauce and sprinkle with coriander leaves, if using.
Step 4: Toss remaining spinach leaves with cucumber and tomatoes and serve salad with the pizza.
