Step 1: In skillet, melt butter and saute mushrooms. If sausage is raw cook with the mushrooms, otherwise add sausage close to the end to heat. Remove, set aside.
Step 2: In small bowl whisk eggs with cream, salt and pepper. Pour into skillet, medium heat, when eggs are getting close to done add cheese, mushroom/sausage mix and baby spinach to one side of the omelet.
Step 3: Fold the other side over. Reduce heat to low, cook covered for two minutes.
Step 4: Remove to plate, top with sour cream and/or chives (optional).
