Step 1: Fit a steamer basket into a large pot and add 3 cups of water and the vinegar; bring to a boil. Add shrimp; cover and steam 5 minutes. Remove shrimp to a baking sheet; shill 15 minutes.
Step 2: In a bowl combine the shallots, soy sauce, lime juice and honey and let stand 10 minutes. Whisk in oils.
Step 3: Add watermelons, lettuce, spinach, avocado and 1/4 cup cilantro to the bowl with the dressing; toss. Place salad on a large platter (leave any extra dressing in bowl) and add shrimp, the pepper flakes if using and 1/4 cup cilantro. Toss. Place shrimp mixture on top of salad and sprinkle with sesame seeds.
