Rhubarb Upside Down Cake

Ingredients
- FOR FILLING
- 1 cup granulated sugar
- 4 cups rhubarb, diced
- 1 cup miniature marshmallows
- FOR CAKE
- 3/4 cup granulated sugar
- 1 1/4 cup all-purpose flour
- 1 1/4 teaspoon baking powder
- Salt, dash
- 1/2 cup milk
- 4 tablespoons butter, softened
- 1 large egg (beaten)
- 1 teaspoon vanilla
How to Make

Step 1: Set oven to 350 degrees.

Step 2: Grease bottom of 9x13 pan.

Step 3: Place Rhubarb in bottom of pan. Sprinkle sugar and vanilla over the rhubarb.

Step 4: In a separate bowl mix together the cake section ingredients. Pour over rhubarb/marshmallows.

Step 5: Bake 40 - 50 minutes or until cake is done.
