Step 1: In a large plastic bag, combine 2 tbsp oil, 2 tbsp lemon juice and all the seasonings.
Step 2: Add chicken, seal and massage marinade into the chicken.
Step 3: Refrigerate 1-4 hours.
Step 4: In a large skillet saute the peppers & onions in the remaining oil until crisp tender.
Step 5: Remove & keep warm.
Step 6: Discard marinade & add chicken to the skillet.
Step 7: Saute chicken over medium heat 5-6 minutes or until chicken is cooked through.
Step 8: Add peppers back into the skillet for a few minutes to heat through.
Step 9: Serve in a tortilla or over rice adding any condiments you like.
