Lime Bundt Cake With Creamy Lime Icing

Ingredients
- FOR CAKE
- 1 box (15.25 ounce) yellow cake mix (or white cake mix)
- 1/2 cup fresh lime juice
- 2 whole limes (zested and divided)
- FOR CREAMY LIME ICING
- 2 ounces cream cheese (softened)
- 1 tablespoon butter, softened
- 1 cup confectioners' sugar (powder sugar)
- 2 tablespoons fresh lime juice,
- 1/2 teaspoon vanilla extract
How to Make

Step 1: Preheat oven to 350°F. Grease and flour a Bundt pan.

Step 2: Prepare cake according to package directions, substituting 1/2 cup lime juice for 1/2 cup of the water.

Step 3: Add zest of 1 lime. Pour batter into pan; bake 35-40 minutes, until toothpick inserted into cake center comes out clean.

Step 4: Prepare the icing: Mix cream cheese and butter until smooth.

Step 5: Stir in sugar until well combined.

Step 6: Stir in lime juice, remaining zest and vanilla.

Step 7: Smooth icing over cooled cake.
