Ingredients
- Shortening (2 quarts/8 cups)
- 15 pounds whole chickens (cut up, 3 chickens/ 5 pounds each)
- FOR DREDGE
- 2 cups all-purpose flour
- 2 teaspoons white pepper
- 2 tablespoons cornmeal (white)
- 2 tablespoons salt
How to Make

Step 1: Heat the shortening in deep fryer.

Step 2: Pour all the dredge ingredients into a brown paper bag, shake the bag until combined. Add in chicken pieces and shake until coated.

Step 3: Put chicken in hot oil. Fry until done.
