Step 1: Preheat oven to 450 degrees.
Step 2: Places potatoes in a large saucepan with enough water to cover potatoes and bring to a boil over medium heat.
Step 3: Reduce heat and cook uncovered for 15 to 20 minutes or until potatoes are almost fork tender then drain.
Step 4: Drizzle the oil over the bottom of a 15x10x1 inch pan which has been lined with foil.
Step 5: Place potatoes on pan and flatten potatoes with a potato masher ,until they're 1/2 inch thickness.
Step 6: Brush potatoes with butter then sprinkle with salt and pepper (if using dried herbs combine with salt & pepper then sprinkle).
Step 7: Roast for 20 to 25 minutes or until golden browned.
Step 8: Sprinkle with chives & parsley.
