Step 1: Combine beef, fish sauce, ginger, kecap manis and half the garlic in a shallow glass dish and marinate for 10 minutes.
Step 2: Heat a wok or large frying pan over high heat and add half the oil, swirl to coat surface and stir-fry beef, in batches, for 1 minute or until browned and transfer to a heatproof plate.
Step 3: Add remaining oil to wok and stir-fry onion and remaining garlic for 1 minutes or until fragrant.
Step 4: Return beef to work and add chilli, snow peas and juice and stir-fry for 1 minute or until heated.
Step 5: Serve sprinkled with coriander and bean sprouts and serve with rice.
