- FOR SALAD
- 1 pound potatoes (red potatoes cooked, chopped)
- 1 red onion (chopped)
- 2 tomatoes, whole (chopped)
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 2 cucumbers, diced
- 1 cup whole kernel corn (frozen)
- 1 can (16 ounce) red kidney beans (drained)
- 1/4 cup red wine vinegar
- FOR DRESSING
- 1 cup mayonnaise
- 1 cup sour cream
- 1/2 cup chutney (mango chutney)
- 1/2 teaspoon curry powder
- 1 tablespoon honey
- Salt, dash
- Pepper, dash
- 8 leaves Bibb lettuce
