Step 1: Finely grate the rind and juice of 1 of the lemon's and cut remaining lemons into wedges.
Step 2: Combine the onion, chili, chive, lemon rind and lemon juice in a bowl and season to taste. Heat a chargrill pan over a high heat. Spray bread with oil and chargrill the bread for approx; 3 minutes each side or until charred to your liking.
Step 3: Place the toast onto serving plates and top with sardines then the salsa.
Step 4: Drizzle with a little oil and serve with the lemon wedges.
