Step 1: Wash and hull strawberries.
Step 2: Purée in a blender or food processor until smooth.
Step 3: Pass through a sieve, if liked.
Step 4: Chill in refrigerator at least one hour.
Step 5: Pour the chilled strawberry purée into a flute (1/3) and then add chilled sparkling wine (2/3).
