Step 1: In your food processor with the steel knife mix garlic and salt, process until they are a paste
Step 2: Add cilantro and parsley, process to a fine mince
Step 3: Add vinegar process for 10 seconds
Step 4: Add oil in a very slow steady stream with the processor on
Step 5: Add hot pepper sauce and the pinch of sugar, mix
Step 6: Chill dressing for several hours. Have it in a sealed jar so you can give it a shake before using
