Step 1: In medium saucepan in boiling salted water boil carrots until just tender about 2-3 minutes(do not overcook) drain and dry.
Step 2: In large skillet over medium-low heat add vegetable oil, add sliced onions simmer stirring occasionally until onions are soft and carmelized.
Step 3: Add matchstickled carrots, stir in honey and orange juice stirring until nicley glazed.
