Step 1: Wash and peel pears. Carefully cut the pears into cubes, not losing much of their juice, and place in a salad bowl.
Step 2: Dice the pecorino and add to the chopped fruit. Toss together lightly and leave to stand for ten minutes.
Step 3: When ready to serve grind fresh black pepper over salad.
