Step 1: Cut peppers in half length ways.
Step 2: Scrape out and discard the cores and seeds.
Step 3: Drizzle olive oil, season with salt and pepper and add a few slivers of garlic into the cavity of each pepper.
Step 4: Preheat the grill to medium high heat.
Step 5: Place the peppers on the grill, cavity side up, until charred.
Step 6: Add a spoonful of pesto into each of the peppers and slices of mozzarella cheese.
Step 7: Continue to cook peppers until cheese is melted.
